Flavor Up Some End of October Creativity (October 27 – November 2)

It may be a Halloween Celebration or Harvest Fest – Quesadillas will meet the need! These pan-seared Tex-Mex favorites begin with tortillas. What makes this a great choice is that quesadillas require a minimum of effort and can feed several people. When a theme beckons, such as needed at the end of October, cut the white tortillas into a ghost shape with a cookie cutter to make Ghostly Quesadillas! For a Harvest theme, cut corn tortillas with a corn shaped cookie cutter to make theme driven quesadillas. The fillings can be cooked chicken with Monterey Jack shredded cheese and julienned green and red bell peppers or cooked beef (fajita style) with Monterey Jack shredded cheese and julienned green and red peppers. First, I cook the julienned peppers in a dash of olive oil and then remove the peppers from the pan.  Marinated chicken or beef is recommended for flavoring. Cut the chicken or beef into thin slices. Then, sear the chicken or beef in the same flavored oil that the peppers were cooked until throughly cooked. In a clean skillet, lightly sprayed with cooking spray, place one tortilla. Top that with the cooked beef or cooked chicken, cheese, and julienned peppers. Then, top the ingredients with a matching tortilla top. Sear and flip so that both sides are heated. Serve the quesadillas with salsa, guacamole, diced tomato, and sour cream. It’s a party favorite and perfect for an October celebration. © Kelly McBride Loft
